other than goulash

K So I had an idea that we would all share our ideas for recipies that are not goulash that can still feed a large crowd. here is my favorite. Will post another later.

Chicken 'N' Sausage File Gumbo

3 lbs chicken thighs
K's Cajun Seasoning
1/2 c vegetable oil
1c flour
1c minced onions
1/2 cup minced celery
1/2 cup minced bell pepper
1tsp Tabasco Sauce
3tbs worcestershire
1/2 tsp ground bay leaves
1tsp K's cajun seasoning
2 1/4 quarts hot water
1/2 c sliced green onions
3 cloves minced garlic
1lb smoked pork sausage thinly sliced

Remove skin from chicken thighs, clean and pat dry with paper towels. Season all over with K's. Heat oil in large, heavy pot. Sear chicken; remove and set aside. Make roux by adding flour to hot oil in pot. Stir constantly over medium high heat till medium brown. Stir onion, bell pepper, and celery into roux; cook until tender. Return chicken to pot nd add tabasco worcestershire, bay leaves,k's and water. cover and allow to simmer one hour. Add green onions, garlic and sausage. Stir cover and simmer another hour. Remove all thigh bones from gumbo. Skim off excess oil (or refrigerate and easily remove hardened fat before reheating). Serve in bowls over hot rice and pass the file. Serves 10-14 bowls.

K's Cajun Seasoning

1 (26 ounce) box salt
3tbl blk pepper
2tbl garlic powder
1tsp onion powder
1tsp nutmeg
2 tbl Accent (optional) " highly reccomended"
2tbl dried parsley flakes
4 tbl red pepper
2 tbl chili powder

mix all in large bowl or coffee can. Fill a shaker for daily use; store remainder in tightly covered container.
