Dinner was fantabulous and as promised here is the recipe. ( I recommend adding about 20 mins if you are cooking 2 at the same time.)
Spicy Rapid Roast Chicken
INGREDIENTS (Nutrition)
1 (3 pound) whole chicken
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Rinse chicken thoroughly inside and out under cold running water and remove all fat. Pat dry with paper towels.
Put chicken into a small baking pan. Rub with olive oil. Mix the salt, pepper, oregano, basil, paprika and cayenne pepper together and sprinkle over chicken.
Roast the chicken in the preheated oven for 20 minutes. Lower the oven to 400 degrees F (205 degrees C) and continue roasting 40 minutes, to a minimum internal temperature of 180 degrees F (85 degrees C). Let cool 10 to 15 minutes and serve.
and the next recipe I am going to try
Delicious Ham and Potato Soup
INGREDIENTS (Nutrition)
1-1/4 cups and 1 tablespoon peeled and diced potatoes
2 tablespoons diced celery
2 tablespoons finely chopped onion
1/4 cup and 1 teaspoon diced cooked ham
1 cup and 3 tablespoons water
2-1/4 teaspoons chicken bouillon granules
1/8 teaspoon salt, or to taste
1/2 teaspoon ground white or black pepper, or to taste
1 tablespoon and 2-1/2 teaspoons butter
1 tablespoon and 2-1/2 teaspoons all-purpose flour
3/4 cup milk
DIRECTIONS
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 8 servings.
Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
